Spiced Pumpkin Soup
Ingredients
- 2.5kg pumpkin
- 1kg potato
- 1 red onion
- 5 cloves of garlic
- 100g butter
- 50ml olive oil
- 1tbsp ground ginger
- 1tbsp curry powder
- 1tsp ground cumin
- 1tsp ground coriander
- 1.5tsp ground cinnamon
- 2l vegetable stock
- Salt
- Pepper
Method
- Peel the pumpkin and potatoes and cut into even 2-3cm chunks.
- Peel and slice the red onion and garlic then lightly fry in a wide based saucepan with oil and butter. After 2-3 minutes, add the spices and fry for a further 2-3 minutes.
- Add in the pumpkin and potato chunks and fry for 4-5 minutes stirring frequently.
- Season the veg with salt and pepper, then add in the vegetable stock. Allow to simmer for 20-25 minutes or until the veg has cooked thoroughly.
- Blend until smooth, check the seasoning and serve while still piping hot.
